Your Google Adsense account is tied to your actual Google Account.

When you create an acocunt with Google, it allows you access to all of Google's advertising solutions. The creation of an account with Google is not exclusive to Adsense. not sure if you can remove your e-mail address from their database and delete your user account completely.

Simply don't go there any more seems to be the best advice I can give.

If you've taken the code off your site, the account should go dormant in time, from lack of use.
